Ingredients
For the Crust
1/2 cup melted coconut oil
1/2 cup vanilla coconut sugar
1 cup almond flour
1 cup oat flour
Pinch of salt
For the Filling
1/2 cup vanilla coconut sugar
1/2 cup maple syrup
2 large eggs
1/2 teaspoon salt
1 1/2 cups chopped pecans
Instructions
1. Prep the pan & oven
Line a 9x9 baking dish with parchment paper, leaving some overhang for easy removal later. Preheat your oven to 350°F.
2. Make the crust
In a medium bowl, combine the melted coconut oil, coconut sugar, almond flour, oat flour, and a pinch of salt. Stir until a soft dough forms.
Press the mixture firmly and evenly into the bottom of your prepared baking dish.
3. Mix the filling
In another bowl, whisk together the coconut sugar, maple syrup, eggs, and salt until smooth. Fold in the chopped pecans.
Pour the filling evenly over the crust.
4. Bake
Bake for 40–45 minutes, or until the top is set and no longer jiggly in the center.
5. Cool & slice
Lift the bars out of the pan using the parchment paper. Let them cool completely before cutting into squares (this helps them hold together!).
